Crock Pot Lasagna–yea! Smoked Lasagna Stuffed Poblanos–OH YEA!!!!

As you probably remember, a few weeks ago I had a bout with the computer gremlins.  So, sorry there is not a picture of the completed lasagna before I went pepper stuffing crazy!  THAT problem has been resolved.  However, I could not let these recipes go by the wayside because they are just too yummy and too easy to pass up.  Ladies, If your man is always wanting to grill or smoke something—here is a recipe you can turn him loose with and everyone will be happy.

For starters there is a Crock Pot Spring Vegetable Lasagna.  You can build it the day before (refrigerate over night) then leave it cooking while you are at work the next day.  By the time you get home your house will be filled with the smells of an Italian kitchen.  The yum-fun-deliciousness does not stop there!!!   After you have enjoyed your traditionally served lasagna, IT'S TIME TO GO CRAZY!!!   The recipes will teach you how to stuff  sweet and lightly spicy poblano peppers with your remaining lasagna, then smoke them on the grill. I can honestly say, that this

was one of the best dishes that I have done so far.  The flavors, the ease…. the flavors!!  It is so delicious my mouth is watering thinking about it.  The rich hearty lasagna, topped with smokey melted cheese and a hint of crunchy spicy poblano surprise.  If you like food that tastes good, (duh) you will have to give this recipe a go.

We enjoyed our Smoked Stuffed Poblanos on the porch with a Spinach and Mustard Green Salad from the Garden.  Of course June-Bug (our Golden) was there to keep us company!!

I wanted to make sure you can see the green mailbox in the background of this picture (behind the bouquet you can see on the table).  My wife brought this idea to the table from Tips for the Lazy Gardner.  It is one of her favorite gardening books!  Just place a nicely painted mailbox in the garden to keep your commonly used gardening tools in.  Gloves, trowel, spades, sunscreen, etc….  All of the things you wish you had, “just to do that one little thing”.  So many times we found ourselves making trips to and from the shed–no more!  Everything we need for the quick little “10-minute tidy” in the garden is now at our fingertips!
